Porcini Mushrooms and Ricotta Tart


Tarta z borowikami i ricottą

Ciasto:
250g mąki
125g masła
1 jajo
100ml wody
Szczypta soli

Nadzienie:
6 średnich borowików
1 cebula
1 ząbek czosnku
200g sera ricotta
2 łyżki gęstej śmietany 18%
100ml wina białego
Masło
Oliwa
Pieprz czarny
Sól
Parmezan
Ser Mimolette
Natka pietruszki

Przygotuj klasyczne ciasto kruche na tartę.
Dłońmi rozetrzyj mąkę z pokrojonym w kostkę masłem. Dodaj jajko, wodę, sól i wyrób na gładkie, elastyczne ciasto. Zawiń folię i odłóż do lodówki na ok. 30 min.
Po tym czasie ciasto podziel na porcje i rozwałkuj na grubość ok. 1 cm.
Foremkę na tartę wyłóż pergaminem lub natłuść masłem i ułóż na niej ciasto. Ciasto równomiernie obciąż fasolą lub grochem (pieczenie na sucho) i wstaw do piekarnika rozgrzanego do temp. 180C na ok. 15-20 min., aż ciasto się zarumieni. Po upieczeniu ciasto wyjmij z piekarnika i poczekaj aż wystygnie.
Borowiki oczyść, umyj i pokrój w kostkę.
Na patelni rozpuść masło i oliwę. Cebulę i czosnek drobno pokrój i smaż przez chwilę na patelni. Następnie dodaj grzyby i smaż przez ok. 10 min. Dolej białe wino i pozwól mu częściowo odparować. Grzyby duś do miękkości prze kolejne 5 min.
Dopraw solą i pieprzem.
Usmażone grzyby pozostaw chwilę do ostygnięcie, a następnie dołóż ricottę, śmietanę, dużą garść posiekanej natki i wymieszaj na jednolitą masę.
Gotowe nadzienie rozsmaruj na upieczonym spodzie, oprósz potartym parmezanem Mimolette, zapiekaj przez ok. 15 min. w temp. 150C, aż wierz się zrumieni.

Porcini mushrooms and ricotta tart

Pastry base:
250g flour
125g butter
1 egg
100ml water
salt

Filling:
6 medium porcini mashrooms
1 onion
1 garlic clove
200g ricotta cheese
2 tbsp thick cream
100ml white wine
Butter
Olive oil
Black pepper
Salt
Parmesan
Mimolette Cheese
Flat parlsey leafs

Prepare a classic pastry base for our tart.
Diced butter crumble with flour in a bowl. Add an egg, water, salt and knead a dough untill it becomes elastic. Wrap it with foil and place in a fridge for about 30 min. After that time pin out the dough to about 1 cm thickness.
Smear a baking tray with butter or olive oil and roll out the pastry on top of the baking tray until it covers the tray evenly. Cover the dough with beans and place in an oven for about 15-20 minutes in temperature of 180C untill it begins to brown. Remove the pastry from oven and let it cool down for few minutes
Wash and dice the mushrooms. Chopped onion and garlic fry on the pan with butter and olive oil for about 10 min. Pour into white wine and let it reduce partly. Everything simmer for another 5 minutes. Spice it with salt and pepper. Leave the mushrooms to cool down and stir in to ricotta, cream and a handful of flat leaves parsley.
Spread the filling on the pastry base, sprinkle with grated parmesan and Mimolette. Next put it back to oven for another 15 minutes in temperature of 150 C. bake it untill the surface becomes gold. Bon appetit!
