Spring Cabbage with Pancetta

Ingredients:
· Spring cabbage
· Pancetta
· Onion
· Bay leaf
· Allspice
· Olive
· Dill
· Vinegar or white wine
· Black pepper
· Salt

Slice thinly a young cabbage.
Chop an onion and pancetta.
Golden the pancetta and leave few bits for garnish.
Golden a chopped onion on olive, add a cabbage, pancetta, bay leaf and allspice. Cook for few minutes until the cabbage soften.
Spice with black pepper, salt, chopped dill and a splash of vinegar.
Garnish with crispy pancetta.
Serve it itself with a slice of bread or as an accompaniment with pork chops and young potatoes.
That dish goes perfectly with pinot noir listed before or simply with a glass of lager.

Młoda kapusta z boczkiem

Składniki:
· Młoda kapusta
· boczek
· cebula
· liść laurowy
· ziele angielskie
· oliwa
· koperek
· ocet winny lub białe wino
· czarny pieprz
· sól

Kapustę i cebulę drobno posiekałem. Boczek pokroiłem w drobną kostkę i wytopiłem oddzielnie na odrobinie oliwy (trochę zostawiłem do dekoracji). Na oliwie zrumieniłem cebulę, dodałem kapustę, podsmażony boczek i wszystkie przyprawy. Chwilę dusiłem, aż kapusta zmiękła. Na koniec dodałem kroplę octu.
Danie idealnie komponuje się z czerwonym winem pinot noir wymienionym w poprzednim poście albo po prostu z mocno schłodzonym piwem.

Borscht

Ingredients:
· Spare ribs
· Beetroots
· Butter beans
· Carrots
· Onions
· Celeriac
· Parsnip
· Leeks
· Bay leafs
· Allspice
· Sour cream
· Vinegar
· Black pepper
· Salt

First of all you must soak the beans in water for whole night before you cook it. Of course you can use the canned one.
To make the broth cook spare ribs in water for about 1 hour. Then add all peeled and washed veg and spices except beetroot and beans . They must be cooked separately.
Beetroots needs to be cooked for approximately 1,5 h until soft. Next you need to peel and shred them. You may use plastic gloves not to get stained.
Now put the beetroots and beans into our broth and let it simmer for some time.
Finally add few spoons of sour cream and spice it with salt, pepper and few drops of vinegar if the soup is too sweet for you.

Russian and Buckwheat Dumplings


Dough
Ingredients:
· Flour
· Warm water
· Olive
· Salt
Combine flour with some warm water, olive and salt. Try to knead plain and elastic dough. Add more flour if it’s too sticky or more water if too hard. Form it into ball and leave for 30 minutes in a plastic bag to rest. Thanks to that it become more elastic, soft and shine. After that time sprinkle your surface with some flour to prevent the dough from sticking. Pin it out using a roller. Using a glass cut a round shaped pieces. Stuff it with your favorite filling and using your fingers stick the edges.
The dumpling cook in a bowling water for about 5 minutes.
Serve it a splash of sour cream or crème fraiche and golden onions. Bon appétit!


Cottage cheese filling

Ingredients:
· Cottage cheese
· Potatoes
· Onion
· Olive
· Black pepper
· Salt
Peel and cook potatoes. Squeeze them thoroughly and combine with cottage cheese. The amount of potatoes and cheese should be even. Golden onions on olive and add into the mixture. Add some salt and black pepper. Mix it all into a one filling.

Buckwheat filling

Ingredients:
· Buckwheat
· Potatoes
· Onion
· Black pepper
· Salt
Exactly as above. The only difference is a buckwheat which should be cooked.



Przepis zamieściłem w języku angielskim ponieważ my go dobrze znamy, a chciałem aby również zagraniczni gości mogli się cieszyć naszymi ukochanymi pierożkami!

OGŁASZAM ALARM!!!

Z przykrością stwierdzam, że w kraju, który słynie z pierogów, jest oferowana taka restauracyjno-barowa tandeta. Ohydne nadzienie, grube i rozciapane ciasto nawet w lokalach, które w swojej nazwie szczycą się pierogami. Dziwny jest ten kraj bo zamiast pysznymi pierożkami, faszerowani jesteśmy kebabami i sushi. Szkoda mi tych turystów, którym oferuje się tak marną namiastkę naszych rodzimych pyszności. Dlatego ja kultywuję tradycję i wałkuję sam…
