Riviera Cafe


Riviera Salad

(Ciepła sałatka nicejska z batami i dressingiem imbirowym)
2 porcje

Sałatka
2 duże bataty
2 garści zielonej fasolki szparagowej
2 jajka
1 cebula czerwona
1 garść oliwek Kalamata
1 puszka tuńczyka (lub najlepiej świeżego, grillowanego)
5-6 sardynek
5 łyżek stołowych oliwy z oliwek
1 łyżeczka ostrej papryki

Dressing
1 łyżka posiekanego imbiru (dressing powinien być mocno imbirowy)
1 ząbek czosnku
5 łyżek oliwy z oliwek
3 łyżki soku z limonki lub cytryny
1 łyżeczka melasy (brązowego cukru)
Sól morska i biały pieprz do smaku

Nagrzej piekarnik do temp. 170C.
Bataty obierz ze skórki i pokrój w dużą kostkę (postępuj dokładnie tak jak w przypadku ziemniaków, którymi możesz je zastąpić). Ułóż bataty w naczyniu do zapiekania i polej oliwą, a następnie wymieszaj tak, aby je dokładnie pokryć tłuszczem. Posyp papryką i piecz przez 20 minut, aż bataty zmiękną i zbrązowieją na końcach.
Fasolkę wrzuć do gotującej się wody i gotuj przez 10 minut aż zmięknie. Po ugotowaniu przelej zimną wodą i odcedź.
Przy pomocy blendera lub łyżki połącz ze sobą wszystkie składniki na dressing. Przypraw solą i pieprzem do smaku.
Jajka ugotuj na miękko przez 5 minut w gotującej się wodzie. Wyjmij je z garnka, obierz ze skorupki i przekrój na pół.
Cebulę pokrój w plasterki.
Ułóż wszystkie składniki sałatki na talerzach i polej dressingiem. Jeśli to konieczne przypraw solą i pieprzem wedle uznania.

Riviera Salad

(Warm Salad Nicoise with Sweet Potatoes and Ginger Dressing)
Serves 2

For the salad

2 large sweet potatoes
2 handfuls of green beans
2 eggs
1 red onion
1 handful Kalamata olives
1 can of tuna (grilled fresh tuna is even more exciting)
5 - 6 anchovies
5 tbsp olive oil
1 tsp spicy paprika

For the dressing

1 tbsp chopped ginger (let’s make it really gingery)
1 clove of garlic
5 tbsp olive oil
3 tbsp lime or lemon juice
1 tsp mollases
Sea salt and white pepper to taste

Preheat the oven to 170C degrees.
Peel and dice the sweet potatoes. Place them on a baking tray, shower with olive oil and spice with paprika. Mix it well using your hands, to cover them thoroughly with oil. Roast in the oven for 20 minutes until soft and brown round the edges.
Place the beans in the pan with boiling water and cook uncovered for 10 minutes until tender and crispy. Rinse under cold running water and drain.
Use the food processor to mix the dressing ingredients together. Add salt and pepper to taste.
Cook the eggs for 5 minutes in boiling water, drain and cool with cold water and then peel and cut in half.
Slice the onions, drain the tuna and gently flake it into large pieces.
Divide the sweet potatoes, beans, tuna, onion, eggs and olives evenly amongst the serving plates. Drizzle over the dressing and season with salt and pepper.
